NYC’s Carbone Opens in Las Vegas at ARIA Resort & Casino

THE ITALIAN THROWBACK CONCEPT LAUNCHES DRAMATIC SIN CITY OUTPOST


The gist: NYC’s throwback Italian hit Carbone recently opened a dramatic Vegas outpost inside the ARIA Resort & Casino. The Major Food Group, which also operates NYC hotspots SantinaDirty FrenchParm and Sadelle’s, drew inspiration from red sauce Italian eateries from the ’50s and ’60s for Carbone’s concept which features waiters clad in red velvet tuxedos and tableside Caesar salad.

The space: The Vegas outpost is like Carbone on steroids, broken up into two dramatic main rooms designed by the SF-based Ken Fulk. The Blue Room features NY subway tiled-walls, a floor inspired by the Rat Pack-era Vegas Sands Casino pool, and gold-tipped lighting. The Red Room is lined with red velvet and leather banquettes and features a striking 1960s-era Murano glass chandelier from an old Ferrari showroom (pictured above). Artwork from notables like Julian Schnabel and Richard Serra line the walls. Take a look around below.

The food: Hit dishes like the spicy rigatoni vodka, veal Parm, lobster fra diavolo will be on offer as well as Vegas-exclusives and seasonally rotating options as the restaurant evolves. Check out the full menu below.

The drinks: Throwback cocktails like the Carbone Mai Tai and The Stinger will complement a 550-bottle wine list featuring rare vintages and a roving rum cart.
